Venison burgers


For the Venison Burgers:

  • 1 pound ground venison

  • 1/2 pound ground pork (for extra moisture)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon Dijon mustard

  • 1 tablespoon olive oil (for cooking)


For the Toppings:

  • 1 large red onion, sliced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 4 sesame seed burger buns

  • Cheese, Lettuce and sliced tomatoes (optional)

  • Your favorite burger condiments (e.g., ketchup, mustard, or mayonnaise)


Instructions


1. Prepare the Caramelized Onions:

  • In a skillet over medium heat, add 2 tablespoons of olive oil.

  • Add the sliced red onions and sprinkle with a pinch of salt and pepper.

  • Cook the onions, stirring occasionally, until they become soft and caramelized (about 15-20 minutes). If they start to brown too quickly, reduce the heat.


2. Make the Venison Burger Patties:

  • In a large mixing bowl, combine the ground venison, ground pork, garlic powder, onion powder, Worcestershire sauce, Dijon mustard, salt, and black pepper.

  • Mix gently until well combined. Be careful not to overmix, as this can lead to tough burgers.

  • Divide the mixture into four equal portions and shape each portion into a patty, about 1-inch thick. Make a slight indentation in the center of each patty to prevent it from puffing up while cooking.


3. Cook the Burgers:

  • Heat a skillet or grill over medium-high heat and add a tablespoon of olive oil.

  • Once hot, place the venison patties in the skillet or on the grill. Cook for about 4-5 minutes on each side for medium-rare to medium doneness. (Adjust the cooking time based on your preferred level of doneness.)

  • During the last minute of cooking, add the caramelized onions on top of the patties to heat through. If you are adding cheese, now is the time to do so as well.


4. Toast the Buns:

  • While the patties are cooking, slice the sesame seed buns in half and toast them on a separate skillet or under a broiler until golden brown.


5. Assemble the Burgers:

  • Place a cooked venison burger patty with caramelized onions on the bottom half of each toasted bun.

  • Add lettuce, tomato slices, and any additional condiments you desire.

  • Top with the other half of the sesame seed bun.


6. Serve and Enjoy!

  • Serve the venison burgers hot with your favorite side dishes, such as fries, chips, or a fresh salad.
